Preparation
- Heat a skillet over medium heat.
- Add 2 cups of diced grilled chicken and cook for about 5 minutes until heated through.
- Season well to enhance the flavor.
Cooking
- Add 1 cup of diced fresh pineapple to the skillet and cook for another 3-4 minutes, allowing it to caramelize.
- Add 1/2 cup of diced red onion and sauté for another 3-4 minutes until softened.
- Squeeze the juice from 1 lime into the mixture and stir well, seasoning with salt and pepper to taste.
- Warm taco shells in another pan for about 1-2 minutes.
- Fill each taco shell with the chicken-pineapple mixture and top with chopped cilantro.
Serving
- Serve immediately while warm. Enjoy!
Notes
Serve with salsa, guacamole, or sour cream. Allow for 2-3 tacos per person as a main dish. Pair with iced tea or light beer.
