Parmesan Crusted Chicken with Creamy Garlic Sauce

Ingredients
  

Chicken and Breading
  • 4 pieces thin chicken cutlets Use fresh or previously thawed.
  • ½ cup all-purpose flour For breading.
  • 2 large eggs, beaten For breading.
  • 1 cup breadcrumbs For coating the chicken.
  • ½ cup grated Parmesan cheese For coating.
Cooking Ingredients
  • 2 tbsp olive oil For frying.
  • 2 tbsp butter For frying.
  • 3 cloves garlic, minced Adds flavor to the sauce.
  • ½ cup chicken broth For the sauce.
  • 1 cup heavy cream Makes the sauce creamy.
  • ¼ cup grated Parmesan cheese For the sauce.
  • to taste Salt & pepper For seasoning.
Garnish
  • to taste Fresh parsley or thyme For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station; place flour in one dish, beaten eggs in another, and mix breadcrumbs with Parmesan in a third dish.
Breading and Cooking
  1. Season chicken cutlets with salt and pepper, then dredge each cutlet in flour, dip in eggs, and coat with breadcrumb mixture.
  2. Heat olive oil and butter in a large oven-safe skillet over medium heat.
  3. Add breaded chicken cutlets and cook for about 4-5 minutes on each side, until golden brown.
  4. Remove the chicken from the skillet and set aside.
Making the Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute.
  2. Pour in chicken broth and scrape any browned bits from the bottom.
  3. Stir in heavy cream and ¼ cup grated Parmesan, and let it simmer for a few minutes until the sauce thickens.
Baking
  1. Return the chicken to the skillet, spoon sauce over the top, and bake in the oven for 10-15 minutes.
  2. Garnish with fresh parsley or thyme before serving.

Notes

Add extra herbs to the breadcrumb mixture for enhanced flavor. Customize the sauce by stirring in spinach or sun-dried tomatoes for added dimension. Serve with garlic bread to soak up the delicious sauce!
