Preparation
- Preheat your oven to 400°F (200°C).
- Set up a breading station; place flour in one dish, beaten eggs in another, and mix breadcrumbs with Parmesan in a third dish.
Breading and Cooking
- Season chicken cutlets with salt and pepper, then dredge each cutlet in flour, dip in eggs, and coat with breadcrumb mixture.
- Heat olive oil and butter in a large oven-safe skillet over medium heat.
- Add breaded chicken cutlets and cook for about 4-5 minutes on each side, until golden brown.
- Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, add minced garlic and sauté for 1 minute.
- Pour in chicken broth and scrape any browned bits from the bottom.
- Stir in heavy cream and ¼ cup grated Parmesan, and let it simmer for a few minutes until the sauce thickens.
Baking
- Return the chicken to the skillet, spoon sauce over the top, and bake in the oven for 10-15 minutes.
- Garnish with fresh parsley or thyme before serving.
Notes
Add extra herbs to the breadcrumb mixture for enhanced flavor. Customize the sauce by stirring in spinach or sun-dried tomatoes for added dimension. Serve with garlic bread to soak up the delicious sauce!
