Preparation
- Preheat your oven to 400°F (200°C).
- Cut the chicken breasts into 1-inch cubes.
- In a mixing bowl, combine the chicken cubes with olive oil, kosher salt, black pepper, garlic powder, onion powder, paprika, and oregano. Toss well to coat all pieces evenly.
Breading
- In a shallow dish, place the panko or cornflakes and dredge each seasoned chicken piece in the crumbs.
- Arrange the coated chicken bites on a baking sheet that is sprayed with cooking spray or lined with parchment paper.
Cooking
- Bake the chicken bites in the preheated oven for 20 minutes or until they reach an internal temperature of 165°F (74°C) and are golden brown.
- Let the chicken bites rest for a few minutes before serving.
Notes
Serve with your favorite dipping sauces, such as honey mustard, ranch, or barbecue. These bites can be frozen for up to 3 months for later use.
