  • 4 large large potatoes, peeled and diced
  • 1 medium medium onion, chopped
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices slices of bacon, cooked and crumbled
  • Salt and pepper to taste
  • Chives or green onions for garnish

Method
 

Preparation
  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the diced potatoes and broth to the pot. Bring to a boil and then simmer until the potatoes are tender, about 15-20 minutes.
  3. Once the potatoes are tender, use a potato masher to mash some of the potatoes for a creamy texture.
  4. Stir in the heavy cream and half of the cheddar cheese, mixing until the cheese melts.
  5. Season with salt and pepper to taste.
Serving
  1. Serve hot, topped with crumbled bacon, remaining cheddar cheese, and chives or green onions.

Notes

Add garlic while sautéing the onions for extra flavor. Customize with toppings like sour cream, jalapeños, or extra cheese for more variety. Freezes well for up to 3 months.
