  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 2 teaspoons Italian seasoning
  • to taste salt and pepper
  • 1 ½ cups ricotta cheese can be mixed with a pinch of salt and pepper
  • 2 cups shredded mozzarella cheese
  • to garnish Fresh basil

Method
 

Cooking
  1. In a large pot, brown the ground meat over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add diced onions and garlic to the pot. Sauté until they become soft, about 3-4 minutes.
  3. Stir in crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
  4. Add broken lasagna noodles and reduce heat. Simmer for about 15 minutes or until noodles are tender.
  5. Season with salt and pepper to taste.
  6. In a small bowl, mix ricotta cheese with a pinch of salt and pepper.
  7. Serve the soup in bowls, adding a spoonful of the ricotta mixture and a generous sprinkle of mozzarella cheese on top. Garnish with fresh basil.
