  • 1 pound Italian sausage (or ground beef)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach (or kale)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Method
 

Cooking
  1. In a large pot over medium heat, cook the Italian sausage until browned, about 5-7 minutes. Drain excess fat.
  2. Add the chopped onion and garlic, cooking until the onion is translucent, about 3 minutes.
  3. Stir in crushed tomatoes, chicken broth, and broken lasagna noodles. Season with Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for about 15 minutes, stirring occasionally until noodles are tender.
  5. Stir in spinach and simmer for an additional 2-3 minutes until wilted.
  6. Serve in bowls topped with dollops of ricotta cheese, shredded mozzarella, and fresh basil.

Notes

Add a pinch of red pepper flakes for a little heat. Experiment with different proteins, like turkey or veggies for a meatless option. Serve with extra cheese on top for a gooey finish.
