  • 8 oz bowtie pasta
  • 2 medium sweet yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 1 cup Gruyère cheese, grated
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

Preparation
  1. In a large pot over medium heat, add 2 tablespoons of olive oil.
  2. Add sliced onions and sauté until golden brown for about 15-20 minutes.
  3. Stir in minced garlic and thyme; cook for 1-2 minutes until fragrant.
  4. Mix in bowtie pasta and vegetable broth; bring to a boil, then reduce heat and simmer for 8-10 minutes until pasta is al dente.
  5. Gradually incorporate heavy cream, simmering for an additional 3-5 minutes until creamy.
  6. Finally, add grated Gruyère cheese until melted, seasoning with salt and pepper.
  7. Enjoy hot, garnished with extra cheese or fresh herbs if desired.

Notes

For flavor enhancement, consider adding a splash of balsamic vinegar. Feel free to include mushrooms or spinach for added nutrition. Top with fried onions or crispy bacon for extra crunch.
