Ingredients
  

Main Protein
  • 1 pound Kielbasa Slice into bite-sized pieces for even cooking.
Aromatics & Vegetables
  • 1 each Red bell pepper Chop into strips.
  • 1 each Yellow bell pepper Chop into strips.
  • 1 cup Baby carrots Slice diagonally.
  • 1 pound Baby potatoes Wash and cut in half if larger than bite-sized.
Liquids
  • 2 tablespoons Honey Can be substituted with maple syrup.
  • 3 cloves Garlic (minced) Provides flavor.
  • 2 tablespoons Soy sauce Use tamari for a gluten-free option.
  • 2 tablespoons Olive oil Mix with honey and soy sauce.
Optional Garnish
  • 2 tablespoons Fresh parsley or green onions (chopped) Sprinkle before serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the kielbasa, chop the bell peppers, and cut the carrots and potatoes as directed.
Cooking
  1. In a large, oven-safe pan, mix the sliced kielbasa, veggies, and baby potatoes together.
  2. In a small bowl, whisk together honey, garlic, soy sauce, and olive oil. Pour this mixture over the kielbasa and veggies, tossing to coat evenly.
  3. Place the pan in the oven and bake for 25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
Finishing Touch
  1. Once out of the oven, sprinkle freshly chopped parsley or green onions on top.

Notes

For an extra flavor boost, add a splash of lemon juice before serving. Customize the veggies based on seasonal availability or personal taste.
