  • 2 tablespoons Honey Local honey enhances flavor.

  • 2 tablespoons Soy Sauce Opt for low-sodium soy sauce for a healthier option.
  • 1 each Bell Peppers (red & yellow) Chop them into similar sizes for even cooking.
  • 1 cup Baby Carrots Slice in half for quicker cooking.
  • 1 pound Baby Potatoes Halve or quarter for even cooking.
  • 2 tablespoons Olive Oil Use for even cooking.
  • 2 tablespoons Fresh Parsley or Green Onions Chop finely and sprinkle just before serving.

Preparation
  1. Wash and chop all vegetables. Slice the kielbasa into bite-sized pieces and set aside.
Cooking
  1. In a large pan, heat olive oil over medium heat until it shimmers.
  2. Add kielbasa to the pan and cook for 5-7 minutes, stirring occasionally until golden-brown.
  3. Add minced garlic and cook for about 1 minute until fragrant.
  4. Introduce bell peppers, baby carrots, and baby potatoes. Stir and cook for about 10 minutes until vegetables begin to soften.
  5. Drizzle honey and soy sauce over the mixture, stirring well to coat and cook for an additional 5 minutes.
  6. Remove from heat and sprinkle with fresh parsley or green onions before serving.

Notes

Customize with your favorite veggies. Serve with a dollop of sour cream or Greek yogurt for added creaminess. Store leftovers in an airtight container for up to 3 days or freeze in portions for up to 2 months.
