  • 1 lb chicken thighs or breasts Trim excess fat and cut into bite-sized pieces.
Starch
  • 1 cup long-grain white rice Rinse under cold water to remove excess starch.
Liquids
  • 2 cups chicken broth Essential for cooking the rice; can substitute with vegetable broth.
Sauces
  • 1/2 cup honey Sweetness component.
  • 1/2 cup BBQ sauce Can replace with teriyaki for a twist.
Aromatics & Vegetables
  • 1 medium onion (chopped) Sauté before adding chicken.
  • 2 cloves garlic (minced) Sauté until fragrant.
Seasoning
  • to taste salt and pepper
  • 1 tbsp olive oil For sautéing aromatics.

Preparation
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat for about 2 minutes.
  2. Add the chopped onion and minced garlic, stirring often for about 3 minutes until fragrant and the onion is translucent.
Cooking
  1. Add the chicken pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until golden on the outside.
  2. In a small bowl, mix honey and BBQ sauce, then pour this mixture over the chicken, stirring to coat evenly. Cook for 2 more minutes until bubbly.
  3. Stir in the rice, mixing thoroughly with the chicken and sauce.
  4. Add 2 cups of chicken broth and stir to combine well, ensuring the rice is submerged, then bring to a gentle boil.
  5. Cover the skillet and reduce the heat to low. Let it simmer for 20 minutes or until the rice is tender and liquid is absorbed.
  6. Remove from heat and let sit covered for 5 minutes. Fluff the rice with a fork, then serve hot.

Notes

Add a dash of cayenne or chili powder for a spicy kick and serve with lime wedges for added zing.
