Preparation
- Heat 1 tablespoon of olive oil in a large skillet over medium heat for about 2 minutes.
- Add the chopped onion and minced garlic, stirring often for about 3 minutes until fragrant and the onion is translucent.
Cooking
- Add the chicken pieces to the skillet and cook for 5-7 minutes, stirring occasionally, until golden on the outside.
- In a small bowl, mix honey and BBQ sauce, then pour this mixture over the chicken, stirring to coat evenly. Cook for 2 more minutes until bubbly.
- Stir in the rice, mixing thoroughly with the chicken and sauce.
- Add 2 cups of chicken broth and stir to combine well, ensuring the rice is submerged, then bring to a gentle boil.
- Cover the skillet and reduce the heat to low. Let it simmer for 20 minutes or until the rice is tender and liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes. Fluff the rice with a fork, then serve hot.
Notes
Add a dash of cayenne or chili powder for a spicy kick and serve with lime wedges for added zing.
