Cooking
- Heat a large skillet over medium-high heat. Add a tablespoon of butter.
- Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for about 5-6 minutes on each side until golden brown and cooked through, checking for an internal temperature of 165°F.
- Once cooked, remove the chicken from the pan and set aside.
- In the same skillet, reduce heat to medium, add the remaining butter, and sauté minced garlic for about 1 minute until fragrant.
- Pour in the chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
- Bring the broth to a gentle boil, then stir in egg noodles and return the chicken to the pan. Cover and simmer for about 8-10 minutes or until the noodles are cooked and most of the broth is absorbed.
- Once noodles are tender, stir in chopped parsley. Taste and adjust seasoning with salt and pepper if needed.
- Remove the pan from heat and serve hot.
Notes
Serve directly from the pan or plate individually. Pair with a simple green salad or steamed vegetables for a fresh side. Adding a splash of lemon juice before serving can enhance flavor, and consider tossing in favorite vegetables.
