Preparation
- In a pan, heat oil over medium heat and sauté the onion until translucent (about 3-4 minutes).
- Add the mixed vegetables and cooked rice, stir-frying until heated through (5 minutes). Season with salt and pepper.
- In a separate bowl, beat the eggs and season them lightly.
Cooking the Omelet
- Heat a non-stick skillet and add oil. Pour in the beaten eggs, swirling to cover the bottom of the pan (3 minutes).
- Once the eggs are set but still soft, add the rice mixture in the center of the omelet.
- Gently fold the omelet over the rice and slide it onto a plate.
Serving
- Drizzle with ketchup or demi-glace before serving.
Notes
You can enhance flavor by adding soy sauce or teriyaki. For a healthier twist, use quinoa instead of rice. Garnishing with fresh herbs adds color.
