  • 2 cups cooked rice Use day-old rice for better texture.
  • 1/2 cup onion, diced Yellow or white onion works best.
  • 1/2 cup mixed vegetables (carrots, peas, etc.) Fresh or frozen mixed vegetables are fine.
  • 2-4 pieces eggs Adjust based on preference for omelet size.
  • 2 tablespoons ketchup For drizzling on top before serving.
  • to taste Salt and pepper Season to your preference.
  • to taste Oil for frying Use a neutral oil like vegetable or canola.
  • Optional demi-glace for topping Adds richness if desired.

Method
 

Preparation
  1. In a pan, heat oil over medium heat and sauté the onion until translucent (about 3-4 minutes).
  2. Add the mixed vegetables and cooked rice, stir-frying until heated through (5 minutes). Season with salt and pepper.
  3. In a separate bowl, beat the eggs and season them lightly.
Cooking the Omelet
  1. Heat a non-stick skillet and add oil. Pour in the beaten eggs, swirling to cover the bottom of the pan (3 minutes).
  2. Once the eggs are set but still soft, add the rice mixture in the center of the omelet.
  3. Gently fold the omelet over the rice and slide it onto a plate.
Serving
  1. Drizzle with ketchup or demi-glace before serving.

Notes

You can enhance flavor by adding soy sauce or teriyaki. For a healthier twist, use quinoa instead of rice. Garnishing with fresh herbs adds color.
