Seasoning and Oil
  • 2 tablespoons ketchup For serving.

Method
 

Cooking the Rice Mixture
  1. In a pan, heat oil over medium heat and sauté the onion until translucent (about 3-4 minutes).
  2. Add the mixed vegetables and cooked rice, stir-frying until heated through (about 5 minutes). Season with salt and pepper.
Preparing the Omelet
  1. In a separate bowl, beat the eggs and season them lightly.
  2. Heat a non-stick skillet and add oil. Pour in the beaten eggs, swirling to cover the bottom of the pan (about 3 minutes).
  3. Once the eggs are set but still soft, add the rice mixture in the center of the omelet.
  4. Gently fold the omelet over the rice and slide it onto a plate.
  5. Drizzle with ketchup or demi-glace before serving.
