Method
 

Preparation
  1. Combine dry ingredients: Mix 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt in a large bowl.
  2. Mix wet ingredients: In a separate bowl, whisk together 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Add vanilla extract if using.
  3. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined; a few lumps are okay.
Cooking
  1. Preheat a non-stick skillet over medium heat and melt a small amount of butter in the pan.
  2. Pour about 1/4 cup of batter onto the pan for each pancake. Cook for about 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
  3. Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm.
  4. Repeat with remaining batter.
