Method
Preparation
- Combine dry ingredients: Mix 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt in a large bowl.
- Mix wet ingredients: In a separate bowl, whisk together 1 cup of milk, 1 large egg, and 2 tablespoons of melted butter. Add vanilla extract if using.
- Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined; a few lumps are okay.
Cooking
- Preheat a non-stick skillet over medium heat and melt a small amount of butter in the pan.
- Pour about 1/4 cup of batter onto the pan for each pancake. Cook for about 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
- Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm.
- Repeat with remaining batter.
Serving
- Serve warm with topping options like maple syrup, fruits, or whipped cream.
Notes
For added flavor, consider adding cinnamon or nutmeg. You can customize by folding in chocolate chips or fruits like blueberries.
