Ingredients
  

  • 3 cups cooked chicken, chopped
  • 1 cup sliced mushrooms
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced almonds
  • 1 sleeve Ritz crackers, crushed
  • 1/2 cup butter, melted

Method
 

  1. Preheat the oven to 350°F (175°C) and lightly grease a casserole dish.
  2. In a large bowl, combine the cooked chicken, mushrooms, cream of chicken soup, sour cream, cheddar cheese, and sliced almonds.
  3. Spread the chicken mixture evenly into the prepared casserole dish.
  4. In a separate bowl, mix the crushed Ritz crackers with melted butter.
  5. Sprinkle the buttery cracker mixture evenly over the casserole.
  6. Bake uncovered for 30–35 minutes, or until bubbly and golden brown on top. Let rest briefly before serving.

Notes

You can prepare this casserole a day in advance and refrigerate until ready to bake. Swap rotisserie chicken for convenience, or use reduced-fat soup and sour cream for a lighter version. Freezes well before baking.
