- Preheat the oven to 350°F (175°C) and lightly grease a casserole dish.
- In a large bowl, combine the cooked chicken, mushrooms, cream of chicken soup, sour cream, cheddar cheese, and sliced almonds.
- Spread the chicken mixture evenly into the prepared casserole dish.
- In a separate bowl, mix the crushed Ritz crackers with melted butter.
- Sprinkle the buttery cracker mixture evenly over the casserole.
- Bake uncovered for 30–35 minutes, or until bubbly and golden brown on top. Let rest briefly before serving.
Notes
You can prepare this casserole a day in advance and refrigerate until ready to bake. Swap rotisserie chicken for convenience, or use reduced-fat soup and sour cream for a lighter version. Freezes well before baking.
