Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking soda, cinnamon, and salt.
- In another bowl, mash the ripe bananas until smooth.
- To the mashed bananas, add butter, brown sugar, granulated sugar, eggs, vegetable oil, and vanilla extract. Mix until well combined.
- Gradually fold the wet mixture into the dry ingredients, mixing until just combined.
- Spoon the batter into a lined muffin tin, filling each cup about 2/3 full.
- Bake for 30-35 minutes until golden and a toothpick inserted comes out clean.
- Allow muffins to cool for 10 minutes before transferring to a wire rack.
- For the glaze, mix powdered sugar, cream or milk, and vanilla extract, then drizzle on cooled muffins.
Notes
For added flavor, consider adding nuts or chocolate chips. These muffins are perfect for breakfast or as a snack.
