Ingredients
  

Main Protein
  • 3 cups cooked, shredded chicken Use rotisserie chicken for convenience or boil and shred your chicken breast.
Starch/Pasta
  • 1 package 8 oz egg noodles Cook and drain them before mixing into the casserole.
Seasoning/Spice Blend
  • 1 tsp garlic powder Tasting as you season helps achieve the perfect blend.
  • 1/2 tsp onion powder A dash of Italian seasoning will add extra flavor.
Liquids/Dairy
  • 1 can 10.5 oz cream of chicken soup Make sure to mix well to avoid lumps.
  • 1 cup sour cream
  • 1/2 cup milk
Aromatics & Vegetables
  • 1 small onion, finely chopped Sautéing increases flavor and makes vegetables tender.
  • 1 small bell pepper, finely chopped
Optional Finishing Ingredients
  • 1/2 cup crushed buttery crackers Mix the crackers with melted butter for extra flavor.
  • 2 cups sharp cheddar cheese, shredded Reserve a bit for topping.
  • 1 cup mozzarella cheese, shredded Reserve a bit for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking results.
  2. In a large bowl, mix together the shredded chicken, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
  3. Gently fold in the cooked egg noodles.
  4. Add the shredded cheddar cheese and mozzarella cheese into the mix, reserving a bit for topping.
  5. Pour the mixture into a greased 9 x 13 inch baking dish.
  6. Sprinkle the reserved cheeses and crushed crackers over the top of the casserole.
Baking
  1. Bake at 350°F (175°C) for about 30-35 minutes, or until the top is golden brown and bubbly.

Notes

For a flavor enhancement, add a teaspoon of hot sauce to the mixture. Customize by adding sautéed vegetables like spinach or mushrooms. Serve with a dollop of sour cream or plain yogurt on top for extra creaminess.
