Ingredients
  

Steak Marinade
  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
Bowl Ingredients
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes (halved)
  • 1 pc cucumber (diced)
  • ½ pc red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
Tzatziki Sauce
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ pc cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 clove garlic (minced)
  • 1 tbsp fresh dill (chopped)
  • to taste Salt & pepper
Vinaigrette
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)
  • 1 clove garlic (minced)
  • ½ tsp dried oregano
  • to taste Salt & pepper

Method
 

Marinate the Steak
  1. Mix the marinade ingredients: olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl, then coat the steak. Let it marinate for 30 minutes to 4 hours.
Prepare the Tzatziki
  1. Combine all the tzatziki ingredients in a bowl and chill them in the fridge to let the flavors blend.
Make the Vinaigrette
  1. In another bowl, whisk together the vinaigrette ingredients: olive oil, lemon juice, honey, garlic, oregano, salt, and pepper.
Cook the Steak
  1. Heat a skillet over high heat, sear the marinated steak for 4–5 minutes on each side until it reaches your desired level of doneness. Let it rest for a few minutes, then slice it thinly.
Assemble the Bowl
  1. Layer the cooked grains, sliced steak, and fresh toppings in a bowl. Drizzle with chilled tzatziki and vinaigrette.
