- Cut the chicken, zucchini, bell pepper, and onion into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.
Cooking
- In a large skillet, heat the extra virgin olive oil over medium-high heat.
- Add the chicken pieces to the skillet. Cook for about 5-7 minutes, until golden brown and cooked through.
- Mix in the zucchini, red bell pepper, red onion, and garlic. Sauté for another 5 minutes until the veggies are tender.
- Stir in the cherry tomatoes, kalamata olives, sun-dried tomatoes, dried oregano, basil, and thyme. Cook for an additional 3 minutes to heat everything through.
- Remove from heat and stir in the lemon juice and feta cheese.
- Sprinkle with fresh parsley before serving.
