  • 2 cloves Garlic Fresh minced garlic is best for flavor.
  • 1/4 cup Sun-dried tomatoes Use additional fresh tomatoes if unavailable.
  • 1 teaspoon Dried oregano Essential for authentic flavor.
  • 1 teaspoon Dried basil Fresh herbs can further elevate the dish.
  • 1 teaspoon Dried thyme
  • 2 tablespoons Lemon juice Add at the end of cooking.

Method
 

Preparation
  1. Cut the chicken, zucchini, bell pepper, and onion into bite-sized pieces. Halve the cherry tomatoes and mince the garlic.
Cooking
  1. In a large skillet, heat the extra virgin olive oil over medium-high heat.
  2. Add the chicken pieces to the skillet. Cook for about 5-7 minutes, until golden brown and cooked through.
  3. Mix in the zucchini, red bell pepper, red onion, and garlic. Sauté for another 5 minutes until the veggies are tender.
  4. Stir in the cherry tomatoes, kalamata olives, sun-dried tomatoes, dried oregano, basil, and thyme. Cook for an additional 3 minutes to heat everything through.
  5. Remove from heat and stir in the lemon juice and feta cheese.
  6. Sprinkle with fresh parsley before serving.

Notes

Enhance flavor by marinating the chicken in olive oil, lemon juice, and herbs before cooking. For a twist, try adding different seasonal vegetables like asparagus or broccoli. Serve with crusty bread to mop up the delicious juices.
