  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella) Choose your favorite cheese.
  • 1/2 cup all-purpose flour
  • 1/4 cup green onions, chopped
  • 1 piece egg Large egg.
  • to taste salt and pepper
  • as needed oil for frying Vegetable or canola oil is ideal.

Preparation
  1. In a large bowl, mix together mashed potatoes, shredded cheese, flour, green onions, egg, salt, and pepper until well combined.
  2. Heat oil in a frying pan over medium heat.
  3. Scoop a tablespoon of the mixture and shape it into a small ball.
Cooking
  1. Carefully place the balls in the hot oil, frying in batches to avoid overcrowding.
  2. Fry until golden brown and crispy, about 4-5 minutes on each side.
  3. Remove and drain on paper towels.

Notes
