Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned (about 5-7 minutes). Remove from pot and set aside.
  2. In the same pot, add onion, garlic, carrots, and celery. Sauté until vegetables are soft (about 5 minutes).
Cooking
  1. Pour in chicken broth and diced tomatoes. Bring to a boil (about 5 minutes).
  2. Add heavy cream and Italian seasoning, stirring to combine.
  3. Return the chicken to the pot and let the soup simmer for about 20 minutes.
  4. Stir in fresh spinach until wilted. Season with salt and pepper.
  5. Serve hot, garnished with Parmesan cheese.

Notes

Enhance flavors by adding a squeeze of lemon juice before serving. Customize with add-ins like mushrooms, fresh herbs, or whole grains. Serve with a side salad to balance out the meal.
