  • 1 pound ground beef Can substitute with ground turkey or sausage.
  • 1 cup pepperoni slices
  • 2 cups cauliflower rice Can use pre-packaged or fresh cauliflower.
  • 1 cup shredded mozzarella cheese Use freshly grated for best melting quality.
  • 1 cup marinara sauce Choose a low-sugar marinara for a healthier version.
  • 1 teaspoon Italian seasoning Dried oregano or basil can be alternatives.

Method
 

Preparation
  1. In a large skillet over medium heat, brown the ground beef for 5-7 minutes until no longer pink.
  2. If using, toss in chopped onions or bell peppers, and sauté for another 3-4 minutes until they are soft and fragrant.
Cooking
  1. Stir in cauliflower rice, marinara sauce, Italian seasoning, and pepperoni into the skillet. Cook for 5 minutes until everything is well-mixed and heated through.
  2. Spoon the mixture into a greased baking dish and spread it out evenly before layering shredded mozzarella cheese on top.
  3. Preheat your oven to 375°F (190°C) and bake for 20-25 minutes until the cheese is bubbling and lightly browned.
Finishing
  1. Once out of the oven, let the casserole rest for about 5 minutes before serving.

Notes

Consider serving with low-carb sides such as zucchini noodles or a garden salad. Use fresh herbs for added flavor.
