Preparation
- Rinse the dried red beans and soak them in water overnight.
- In a large pot, heat a little oil and add the diced sausage. Cook until browned.
- Add onion, green bell pepper, celery, and garlic to the pot. Sauté until soft.
Cooking
- Stir in the soaked red beans, Creole seasoning, cayenne pepper, bay leaves, and broth.
- Bring the mixture to a boil. Reduce heat and simmer for about 1 hour or until beans are tender.
- Remove bay leaves and adjust seasoning if needed.
Serving
- Serve the bean mixture over cooked white rice, garnished with green onions and parsley.
Notes
Serve with cornbread or a fresh salad for a complete meal. For a vegetarian option, substitute sausage with mushrooms or a plant-based sausage.
