  • 1 cup Dried red beans Rinsed and soaked overnight
  • 1 lb Smoked sausage or andouille sausage Diced
  • 1 cup Onion Diced
  • 1 cup Green bell pepper Diced
  • 1 cup Celery Diced
  • 4 cloves Garlic Minced
  • 2 tbsp Creole seasoning
  • 1/4 tsp Cayenne pepper Optional, adjust to taste
  • 2 leaves Bay leaves
  • 4 cups Chicken or vegetable broth
  • 3 cups Cooked white rice
  • 1/2 cup Green onions Chopped, for garnish
  • 1/4 cup Fresh parsley Chopped, for garnish

Method
 

Preparation
  1. Rinse the dried red beans and soak them in water overnight.
  2. In a large pot, heat a little oil and add the diced sausage. Cook until browned.
  3. Add onion, green bell pepper, celery, and garlic to the pot. Sauté until soft.
Cooking
  1. Stir in the soaked red beans, Creole seasoning, cayenne pepper, bay leaves, and broth.
  2. Bring the mixture to a boil. Reduce heat and simmer for about 1 hour or until beans are tender.
  3. Remove bay leaves and adjust seasoning if needed.
Serving
  1. Serve the bean mixture over cooked white rice, garnished with green onions and parsley.

Notes

Serve with cornbread or a fresh salad for a complete meal. For a vegetarian option, substitute sausage with mushrooms or a plant-based sausage.
