Preparation
  1. In a large pot, sauté the chopped onion until translucent.
  2. Add the diced potatoes and broth, and bring to a boil.
  3. Reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  4. Mash some of the potatoes in the pot for a creamier texture.
  5. Stir in the heavy cream and cheddar cheese until melted and combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with crumbled bacon and chopped green onions.

Notes
