Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Use room temperature butter for best results.
  • 1 cup granulated sugar
  • 2 large eggs Ensure eggs are at room temperature.
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Sifted before measuring for accuracy.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup lemon juice Freshly squeezed for best flavor.
  • Zest of 1 lemon Use a microplane for zesting.
For the Frosting
  • 2 cups powdered sugar
  • 2 tablespoons lemon juice Adjust for desired consistency.
  • Lemon zest for garnish Use as desired for decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with lemon juice, until fully incorporated.
  6. Fold in the lemon zest.
  7. Drop tablespoon-sized balls of dough onto ungreased baking sheets.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Frosting
  1. For the frosting, mix powdered sugar and lemon juice until smooth.
  2. Spread the frosting over the cooled cookies and garnish with extra lemon zest.

Notes

Enhance the flavor by adding a pinch of salt to the frosting. Customize by incorporating poppy seeds or a hint of lavender.
