Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Use at room temperature for easier mixing.
  • 3/4 cup granulated sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons dried lavender flowers (culinary grade) Make sure they are culinary grade.
  • 1/4 cup finely chopped almonds or walnuts Optional for added crunch.
For Sprinkling
  • 2 tablespoons granulated sugar For sprinkling on cookies before baking.
  • 1 teaspoon dried lavender For sprinkling on cookies before baking.

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add honey, egg, and vanilla extract, mixing well.
  4. Gradually add flour, baking soda, salt, and dried lavender flowers. Stir until combined.
  5. If desired, fold in chopped almonds or walnuts for added crunch.
Bake the Cookies
  1. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Sprinkle each cookie with granulated sugar and a pinch of dried lavender.
  3. Bake for 15-20 minutes, or until the edges are lightly golden.
  4. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve these cookies on a beautiful platter and pair with herbal tea or milk. For a fancy touch, dust with powdered sugar before serving. Experiment with flavors by adding lemon zest or different nuts.
