Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots and celery, cooking for an additional 5 minutes.
  4. Pour in the vegetable broth and add diced tomatoes, oregano, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. Stir in the kale or spinach and cook until wilted.
  7. Adjust seasoning and add lemon juice before serving.
