Preparation
- Preheat your oven to 400°F.
- Clean the sweet potatoes and pierce them with a fork several times. Wrap them in foil.
- Bake the sweet potatoes for 30-35 minutes until soft.
Cooking
- In a skillet over medium heat, add ground beef (or turkey) and cook for about 8-10 minutes until browned, breaking up any large chunks.
- Stir in salt and smoked paprika. Mix well and cook for another minute.
- Add cottage cheese to the beef mixture, stirring until well combined. Cook for an additional 2-3 minutes.
- Remove the sweet potatoes from the oven. Carefully slice them open and scoop out a little flesh to make room for the filling.
- Spoon the beef-cottage cheese mixture generously into each sweet potato.
- Top each with sliced avocado.
- Finish by drizzling hot honey on each boat. Serve warm.
