  • 2 small sweet potatoes Choose firm sweet potatoes, avoiding any with soft spots.
  • 1/2 lb ground beef (or turkey) Lean ground chicken can be used as an alternative.
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika (or chili powder) Adjust spices based on heat tolerance.
  • 2/3 cup cottage cheese Opt for low-fat for a lighter dish, Greek yogurt can be a substitute.
  • 1/2 avocado (sliced) Cut just before serving to prevent browning.
  • 2–3 tsp hot honey (or honey + chili flakes) Adjust the amount to tailor sweetness and heat.

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Clean the sweet potatoes and pierce them with a fork several times. Wrap them in foil.
  3. Bake the sweet potatoes for 30-35 minutes until soft.
Cooking
  1. In a skillet over medium heat, add ground beef (or turkey) and cook for about 8-10 minutes until browned, breaking up any large chunks.
  2. Stir in salt and smoked paprika. Mix well and cook for another minute.
  3. Add cottage cheese to the beef mixture, stirring until well combined. Cook for an additional 2-3 minutes.
  4. Remove the sweet potatoes from the oven. Carefully slice them open and scoop out a little flesh to make room for the filling.
  5. Spoon the beef-cottage cheese mixture generously into each sweet potato.
  6. Top each with sliced avocado.
  7. Finish by drizzling hot honey on each boat. Serve warm.

Serve on a colorful platter. Pair with fresh salad or roasted vegetables. Top with fresh herbs for added flavor.
