Ingredients
  

Shrimp and Sauce
  • 1 pound shrimp, peeled and deveined Fresh or thawed frozen shrimp can be used.
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 1 tablespoon olive oil Can substitute with butter for a richer flavor.
Base and Vegetables
  • 1 cup cooked rice or quinoa Choose your preferred base.
  • 1 cup mixed vegetables (bell peppers, broccoli, snap peas) Customize with your choice of vegetables.
  • to taste green onions, for garnish
  • to taste sesame seeds, for garnish

Method
 

Preparation
  1. In a bowl, whisk together honey, soy sauce, garlic, and ginger.
  2. Heat olive oil in a pan over medium heat.
Cooking
  1. Add shrimp to the pan and cook for 2-3 minutes until they start to turn pink.
  2. Pour the honey garlic mixture over the shrimp and cook until shrimp are fully cooked, about another 2-3 minutes.
  3. In another pan, stir-fry the mixed vegetables until tender.
Serving
  1. Serve the shrimp over cooked rice or quinoa, topped with stir-fried vegetables.
  2. Garnish with green onions and sesame seeds.

Notes

Enhance flavor by adding a splash of lime juice or zest. Customize with your choice of vegetables, such as carrots or zucchini. Serve over cauliflower rice for a low-carb option.
