  • 1 lb chicken thighs (boneless skinless, cut into 2” pieces)
  • 1 tbsp cornstarch
  • 1 tbsp flour (you can use Bob’s gluten free 1 to 1)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 3 cloves garlic (sliced thinly)
  • 1 tbsp avocado oil
  • 1/4 cup honey
  • 4 tbsp cold unsalted butter
  • 1 tbsp soy sauce (or tamari)
  • 1 tbsp rice vinegar
  • to taste finely chopped parsley (for garnish)

Method
 

Preparation
  1. In a bowl, combine cornstarch, flour, salt, pepper, and garlic powder.
  2. Toss the chicken pieces in the mixture until coated evenly.
Cooking
  1. Heat avocado oil in a skillet over medium-high heat, then add the coated chicken.
  2. Cook the chicken until browned and cooked through, about 6-8 minutes. Remove and set aside.
  3. In the same skillet, add sliced garlic and sauté until fragrant.
  4. Stir in honey, butter, soy sauce, and rice vinegar, mixing until smooth.
  5. Return the chicken to the skillet, coating it in the honey butter sauce.
  6. Cook for an additional 2-3 minutes until heated through.
  7. Garnish with finely chopped parsley before serving.

Notes

Serve on a platter, drizzling extra sauce over the top. Pair with steamed vegetables or rice for a complete meal. Consider a light white wine or iced tea for beverage pairing.
