For Frying
  • 2 cups vegetable oil Ensure oil is at the right temperature for frying.
For Dusting

Preparation
  1. Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and nutmeg.
  2. Combine wet ingredients: In another bowl, whisk together buttermilk, eggs, and vanilla extract until smooth.
  3. Melt butter gently until warm, then mix into the wet ingredients.
  4. Combine both mixtures: Pour wet ingredients into dry ingredients and stir gently until just combined.
Cooking
  1. Heat vegetable oil in a deep pot over medium heat until it reaches 350°F (175°C).
  2. Fry the beignets: Drop batter into hot oil and cook for about 2-3 minutes per side until golden brown.
  3. Drain and dust: Remove beignets from oil and place on paper towels. Dust with powdered sugar while warm.
