Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk until well mixed.
  3. In another bowl, whisk together applesauce, honey or maple syrup, vegetable oil, and eggs. Stir in vanilla extract.
  4. Fold in the grated carrots gently into the wet mixture.
Cake Baking
  1. Pour the wet mixture into the dry ingredients, stirring until just combined.
  2. If using, fold in raisins and walnuts.
  3. Pour the batter into a greased 9x13 inch baking pan and bake for 45 minutes or until a toothpick comes out clean.
  4. Allow the cake to cool in the pan for about 20 minutes.
  5. While cooling, mix ricotta cheese with honey or maple syrup for frosting.
  6. Once the cake is fully cooled, spread the frosting over the top.

Notes

Add lemon zest to the frosting for an added fresh flavor. This cake can be customized with different nuts or dried fruits.
