Ingredients

  • 2 pieces Chicken breasts Boneless and skinless
  • 2 medium Sweet potatoes Diced
  • 2 cups Broccoli Fresh, chopped
  • 1 cup Rice White or brown, cooked according to package instructions
  • 1/2 cup Chipotle sauce For drizzling
  • 1 large Avocado Sliced
  • 2 tbsp Olive oil For roasting the sweet potatoes
  • to taste Salt
  • to taste Pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Dice sweet potatoes and toss them in olive oil, salt, pepper, garlic powder, and onion powder.
Cooking
  1. Spread the potatoes on a baking sheet and roast for about 25 minutes until tender.
  2. While the potatoes are cooking, grill or pan-sear chicken breasts until fully cooked, about 6-7 minutes per side.
  3. Steam or sauté broccoli until bright green and tender.
  4. Cook rice according to package instructions.
Assembly
  1. Assemble your bowls: start with a layer of rice, then add chicken, sweet potatoes, and broccoli.
  2. Top with avocado slices and drizzle with chipotle sauce.

Notes

Enhance flavor by marinating chicken in chipotle sauce before cooking. Customize your bowl with favorite veggies. Serve warm or at room temperature.
