  • 1 tbsp olive oil For roasting the sweet potatoes.
  • Salt and pepper to taste Adjust according to preference.
  • 1 tsp paprika Adds a nice flavor.
  • 1 tsp garlic powder Enhances the taste of chicken and sweet potatoes.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder. Spread them on a baking sheet.
Cooking
  1. Bake sweet potatoes for 25-30 minutes, or until tender.
  2. Meanwhile, rinse the rice and cook it in water or chicken broth according to package instructions.
  3. In a skillet, cook diced chicken over medium heat until no longer pink, seasoning with salt and pepper.
Assembly
  1. Once everything is cooked, assemble the bowls by layering rice, chicken, and sweet potatoes.

Notes
