  • 2 cups cooked rice
  • 1 pound ground chicken Lean ground chicken works best
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Fresh or frozen can be used
  • 2 pieces eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil For cooking
  • 2 pieces green onions, chopped To top before serving
  • Salt and pepper to taste

Method
 

Cooking Steps
  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the ground chicken and cook until browned and fully cooked.
  3. Push the chicken to one side of the skillet, and crack the eggs into the other side. Scramble the eggs until fully cooked.
  4. Add the mixed vegetables and cooked rice to the skillet.
  5. Pour the soy sauce over the rice and stir everything together, cooking until heated through.
  6. Season with salt and pepper, and top with chopped green onions before serving.

Notes

Enhance flavors with garlic or ginger, customize with different proteins, and serve with a side salad for added freshness. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
