Cooking Steps
  1. Heat olive oil in a large pot over medium-high heat. Add the diced onion and cook for 3-4 minutes until soft and translucent.
  2. Add minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add ground beef, breaking it up with a spoon. Cook for about 5-7 minutes until browned, draining excess fat if necessary.
  4. Stir in chili powder, cumin, smoked paprika, and cayenne pepper (if using). Let spices cook for 1-2 minutes.
  5. Mix in tomato paste and cook for another 2-3 minutes.
  6. Pour in diced tomatoes, beef broth, and season with salt and pepper. Bring to a simmer then lower heat and simmer for 20-25 minutes.
  7. After simmering, add kidney beans and black beans, and continue to simmer for another 10-15 minutes.
  8. Taste and adjust seasoning as desired. If too thick, add more beef broth.
  9. Serve in bowls with your choice of toppings.
