Preparation
- Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes with 2 tbsp olive oil, 1 tsp garlic powder, and a pinch of salt. Spread them evenly on a baking sheet and roast for 25-30 minutes, flipping halfway through, until they are caramelized and tender.
- In a large skillet over medium heat, add the ground beef. Cook for about 7-10 minutes, breaking it apart and stirring frequently, until it's well browned.
- Once the beef is browned, stir in the remaining 1 tsp garlic powder, smoked paprika, and cumin. Cook for another 1-2 minutes.
- Next, drizzle in 2 tbsp of hot honey. Stir well to coat the beef evenly and let it simmer for a minute.
- To serve, spoon 2 cups of cooked white rice or cauliflower rice into bowls. Top with the roasted sweet potatoes and the hot honey beef mixture.
- Add sliced avocado and fresh cilantro on top for garnish.
