Ingredients
  

Main Protein
  • 1 lb Ground beef Preferably an 80/20 blend for best flavor and juiciness.
Starch
  • 2 medium Sweet potatoes Cubed for natural sweetness and creaminess.
Seasoning
  • 2 tsp Garlic powder For flavor enhancement.
  • 1 tsp Smoked paprika Adds meat color and flavor.
  • 1 tsp Cumin For seasoning.
Liquids
  • 3 tbsp Hot honey Divided for spiciness; can substitute with regular honey plus hot sauce.
Aromatics & Vegetables
  • 1 medium Avocado Sliced for garnish.
  • 1/4 cup Fresh cilantro Chopped for garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes with 2 tbsp olive oil, 1 tsp garlic powder, and a pinch of salt. Spread them evenly on a baking sheet and roast for 25-30 minutes, flipping halfway through, until they are caramelized and tender.
  2. In a large skillet over medium heat, add the ground beef. Cook for about 7-10 minutes, breaking it apart and stirring frequently, until it's well browned.
  3. Once the beef is browned, stir in the remaining 1 tsp garlic powder, smoked paprika, and cumin. Cook for another 1-2 minutes.
  4. Next, drizzle in 2 tbsp of hot honey. Stir well to coat the beef evenly and let it simmer for a minute.
  5. To serve, spoon 2 cups of cooked white rice or cauliflower rice into bowls. Top with the roasted sweet potatoes and the hot honey beef mixture.
  6. Add sliced avocado and fresh cilantro on top for garnish.

Notes

Feel free to customize with other toppings like feta cheese or pickled onions. Can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
