Main Ingredients
  • 1 lb lean ground beef (93%) You can swap out beef for turkey or plant-based protein.
  • 2 medium sweet potatoes, peeled and diced Fresh sweet potatoes provide the best flavor.
  • 1 sliced avocado Make sure to use ripe avocado.
  • 1 cup cottage cheese Can substitute with Greek yogurt for a lighter option.
  • 1 diced yellow onion Onion adds sweetness when cooked.
  • 2 tbsp olive oil Divided for roasting potatoes and sautéing onion.
  • 1 packet taco seasoning Or use 2 tbsp if bulk seasoning.
  • 2 tbsp hot honey Can adjust quantity for desired sweetness and heat.
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt and pepper, to taste
Optional Garnishes
  • Chopped cilantro Adds freshness.
  • Red pepper flakes For an extra kick.
  • Lime juice Zesty addition.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper.
Cooking
  1. Roast sweet potatoes for 40–45 minutes, stirring halfway.
  2. In a skillet, heat 1 tbsp olive oil over medium heat. Sauté diced onion until soft, about 3–4 minutes.
  3. Add ground beef to the skillet, breaking it apart. Cook for 6–8 minutes until browned, stirring in taco seasoning, salt, and pepper.
Assembly
  1. Place sweet potatoes on the bottom of a bowl, then add ground beef, avocado slices, and a scoop of cottage cheese.
  2. Drizzle hot honey generously over each bowl and add optional garnishes, if desired.
  3. Serve immediately and enjoy while warm.

Notes

This dish allows for customization. Swap proteins or add toppings as desired. Suggestions for sides include tortilla chips or a light salad.
