Cake Ingredients
  • 2.5 cups all-purpose flour
  • 2.5 teaspoons cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cups granulated sugar
  • 1.5 cups vegetable oil
  • 3 large eggs
  • 1 tablespoon + 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup buttermilk
  • 1 tablespoon green food coloring
Cream Cheese Frosting
  • 0.75 cups unsalted butter (at room temperature)
  • 8 ounces cream cheese (at room temperature)
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon salt
  • 4 to 4.5 cups powdered sugar
  • 1 to 2 tablespoons milk or heavy cream (if necessary)
  • green sprinkles for decorating (if desired)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a larger bowl, mix sugar and vegetable oil until well combined.
  4. Add the eggs, vanilla extract, and vinegar to the sugar mixture and mix until smooth.
  5. Alternate adding the dry mixture and buttermilk to the wet mixture, starting and ending with the dry ingredients.
  6. Stir in the green food coloring until evenly distributed.
Baking
  1. Divide the batter between the prepared cake pans and smooth the tops.
  2. Bake in the preheated oven for 30 minutes or until a toothpick comes out clean.
  3. Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Frosting and Serving
  1. While the cakes cool, prepare the cream cheese frosting by beating butter and cream cheese until smooth. Add vanilla, salt, and gradually mix in powdered sugar until desired consistency is reached. Add milk if needed to thin.
  2. Once cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the whole cake. Decorate with green sprinkles if desired.

Notes

You can customize your cake by using different colors of food dye. Serve with fresh fruit or a scoop of vanilla ice cream. This cake can be stored in the refrigerator for up to 5 days.
