Ingredients
  

For the Chicken
  • 1 pound chicken breast boneless and skinless
  • 2 tablespoons olive oil for marinating
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Bowl
  • 1 cup cooked quinoa or rice as the base
  • 1 cup cucumber diced
  • 1 cup tomato diced
  • 1/2 cup red onion sliced
  • 1/2 cup feta cheese crumbled
  • 1 cup tzatziki sauce for topping
  • 1/4 cup fresh herbs such as parsley or dill, for garnishing

Method
 

Preparation
  1. Marinate the chicken breast in olive oil, minced garlic, lemon juice, oregano, salt, and black pepper for at least 30 minutes.
  2. Prepare the tzatziki sauce by combining grated cucumber, yogurt, garlic, lemon juice, dill, salt, and pepper in a bowl.
Cooking
  1. Grill or sauté the chicken until fully cooked.
Assembly
  1. Assemble the bowls by placing a layer of cooked quinoa or rice at the bottom.
  2. Add sliced grilled chicken, diced cucumbers, tomatoes, red onion, and crumbled feta cheese.
  3. Drizzle tzatziki sauce over the top and garnish with fresh herbs.

Notes

Enhance flavor with a squeeze of fresh lemon juice over the finished bowls. Customize with your favorite vegetables or switch feta for another cheese. Serve with a side of olives or a mixed green salad for a complete meal.
