Ingredients
  

For the Chicken Marinade
  • 4 oz Chicken breast Boneless, skinless
  • 2 tbsp Olive oil
  • 2 cloves Garlic Minced
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tsp Oregano Dried
  • 1 tsp Salt
  • 1 tsp Pepper
For the Bowl Assembly
  • 1 cup Cooked quinoa or rice
  • 1 cup Cucumber Diced
  • 1 cup Tomatoes Diced
  • 1 cup Red onion Thinly sliced
  • 4 oz Feta cheese Crumble or cube
  • 1 cup Tzatziki sauce For drizzling

Method
 

Preparation
  1. Marinate the chicken in olive oil, minced garlic, lemon juice, oregano, salt, and pepper for at least 30 minutes.
Cooking
  1. Grill or pan-fry the chicken until cooked through, then slice.
Assembly
  1. In a bowl, layer cooked quinoa or rice, fresh veggies (cucumber, tomatoes, red onion), and sliced chicken on top.
  2. Crumble feta cheese over the top and drizzle with homemade tzatziki sauce.
  3. Serve immediately or meal prep for future meals.

Notes

For extra flavor, add herbs like parsley or dill to the sauce. Customize toppings by adding avocados or different vegetables. Try serving on a large platter for a fun sharing experience.
