Ingredients
  

For the Mofongo
  • 3 pieces green plantains Peel and slice before cooking.
  • 4 tablespoons butter Divided for cooking and mashing.
For the Garlic Shrimp
  • 4 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined Use fresh or thawed frozen shrimp.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
Garnish
  • Chopped cilantro For garnish.

Method
 

Preparation
  1. Peel and slice the green plantains.
  2. In a pot of boiling water, cook the plantains until soft, about 15-20 minutes.
Cooking
  1. In a skillet, melt 2 tablespoons of butter over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add shrimp to the skillet, season with salt and pepper, and cook until shrimp are pink and cooked through, about 3-4 minutes.
  4. Stir in the chicken broth and allow it to reduce slightly.
  5. Drain the plantains and mash them with the remaining butter until smooth, about 2-3 minutes.
  6. Form the mashed plantains into a bowl shape on a plate.
  7. Fill the plantain bowl with the garlic shrimp mixture and garnish with chopped cilantro.
  8. Serve immediately.

Notes

You can enhance flavor with lime juice or paprika. Customize with sautéed vegetables or chicken instead of shrimp. For a hearty meal, serve with crusty bread or rice.
