Preparation
- Peel and slice the green plantains.
- In a pot of boiling water, cook the plantains until soft, about 15-20 minutes.
Cooking
- In a skillet, melt 2 tablespoons of butter over medium heat.
- Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Add shrimp to the skillet, season with salt and pepper, and cook until shrimp are pink and cooked through, about 3-4 minutes.
- Stir in the chicken broth and allow it to reduce slightly.
- Drain the plantains and mash them with the remaining butter until smooth, about 2-3 minutes.
- Form the mashed plantains into a bowl shape on a plate.
- Fill the plantain bowl with the garlic shrimp mixture and garnish with chopped cilantro.
- Serve immediately.
Notes
You can enhance flavor with lime juice or paprika. Customize with sautéed vegetables or chicken instead of shrimp. For a hearty meal, serve with crusty bread or rice.
