  • 3 pieces green plantains
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • Chopped cilantro for garnish

Method
 

Preparation
  1. Peel and slice the green plantains.
  2. In a pot of boiling water, cook the plantains until soft, about 15-20 minutes.
Cooking
  1. In a skillet, melt 2 tablespoons of butter over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add shrimp to the skillet, season with salt and pepper, and cook until shrimp are pink and cooked through, about 3-4 minutes.
  4. Stir in the chicken broth and allow it to reduce slightly.
  5. Drain the plantains and mash them with the remaining butter until smooth, about 2-3 minutes.
Assembly
  1. Form the mashed plantains into a bowl shape on a plate.
  2. Fill the plantain bowl with the garlic shrimp mixture and garnish with chopped cilantro.
  3. Serve immediately.

Notes

Enhance flavor by adding a splash of lime juice or a sprinkle of paprika. Customize by mixing in sautéed vegetables or using chicken instead of shrimp.
