Preparation
- Preheat your oven to 425°F (220°C).
- Season the chicken with Italian seasoning, smoked paprika, salt, and pepper.
- Cut the baby potatoes in half and toss them with olive oil, salt, and pepper.
Cooking
- In a large oven-proof skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the seasoned chicken and cook for about 5 minutes on each side until golden brown.
- Add the halved potatoes and minced garlic to the skillet, stir to combine, and let cook for 1-2 minutes.
- Transfer the skillet to the preheated oven and bake for about 25-30 minutes.
- The chicken should reach an internal temperature of 165°F (75°C) and the potatoes should be tender.
- Five minutes before removing from the oven, sprinkle grated Parmesan over the chicken and potatoes.
Notes
