Garlic Parmesan Chicken and Potatoes

Ingredients
  

Main Protein
  • 4 pieces boneless skinless chicken breasts or thighs Pat them dry and season well for best results.
Starch/Pasta
  • 1 pound baby Yukon Gold or red potatoes Halve them for faster cooking.
Seasoning/Spice Blend
  • 1 tablespoon Italian seasoning Mix with smoked paprika, salt, and pepper.
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste black pepper
Liquids/Dairy
  • 2 tablespoons olive oil Use extra virgin for better flavor.
Aromatics & Vegetables
  • 4 cloves fresh garlic, minced Add towards the end of cooking to prevent burning.
  • 1/4 cup fresh parsley, chopped Use as a garnish.
Optional Finishing Ingredients
  • 1/2 cup grated Parmesan cheese Add five minutes before removing from the oven.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Season the chicken with Italian seasoning, smoked paprika, salt, and pepper.
  3. Cut the baby potatoes in half and toss them with olive oil, salt, and pepper.
Cooking
  1. In a large oven-proof skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the seasoned chicken and cook for about 5 minutes on each side until golden brown.
  3. Add the halved potatoes and minced garlic to the skillet, stir to combine, and let cook for 1-2 minutes.
  4. Transfer the skillet to the preheated oven and bake for about 25-30 minutes.
  5. The chicken should reach an internal temperature of 165°F (75°C) and the potatoes should be tender.
  6. Five minutes before removing from the oven, sprinkle grated Parmesan over the chicken and potatoes.

Notes

Enhance the flavor by marinating the chicken in spices for a few hours before cooking. Customize with your favorite vegetables.
