  • 2 lbs boneless, skinless chicken breasts or thighs You can use either breasts or thighs based on preference.
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 0.5 cup unsalted butter, melted 1 stick of butter.
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish) For added flavor and presentation.
  • 0.5 cup chicken broth Use low-sodium if preferred.

Preparation
  1. Place the quartered baby red potatoes and carrot chunks at the bottom of the crockpot.
  2. Season the chicken breasts or thighs with salt, pepper, and Italian seasoning.
  3. Arrange the seasoned chicken on top of the vegetables in the crockpot.
  4. Pour the minced garlic and melted butter over the chicken.
  5. Add the chicken broth around the edges.
  6. Cover the crockpot and cook on low for 6 hours, or until the chicken is tender.
  7. Once done, shred the chicken with two forks and mix everything together before serving.

Notes

For more flavor, consider adding herbs like thyme or rosemary. Customize by using different vegetables like green beans or bell peppers. Try serving over quinoa or rice for a hearty twist.
