Cooking
- To a large skillet, add the olive oil and pounded chicken. Evenly season with 21 Salute, salt, and pepper.
- Cook over medium-high heat for 5 minutes without moving the chicken.
- After 5 minutes, flip the chicken over – it should have a medium golden color. If using thicker chicken breasts, sear for an additional 6-7 minutes.
- Let it cook on the second side for about 5 minutes until fully cooked. Then, remove the chicken with a slotted spatula and place it on a plate to rest.
- Using caution, deglaze your skillet by adding wine or broth, letting it bubble up and steam for a few seconds.
- Add butter and let it melt for about 1 minute, stirring continuously.
- Next, add the garlic and cook until fragrant, which should take about 1 minute.
- Turn off the heat, return the chicken to the skillet, and flip it around in the garlic butter sauce to coat.
- Spoon the sauce over the chicken, garnish with parsley if desired, and serve immediately.
Notes
Enhance flavor with a squeeze of fresh lemon juice, and customize with herbs like rosemary or thyme. Serve chicken over rice or pasta to soak up the sauce.
