  • 1.5 pounds boneless skinless chicken breasts (pounded to an even thickness)
  • 1-2 teaspoons 21 Salute Seasoning or poultry seasoning
  • 1 teaspoon kosher salt (or to taste)
  • 1 teaspoon freshly ground black pepper (or to taste)
  • 0.5 cup white wine or chicken broth (as necessary)
  • 3 tablespoons unsalted butter (or more for extra sauce)
  • 1 tablespoon garlic (finely minced; or to taste)
  • 2 teaspoons fresh parsley (optional for garnishing)

  1. To a large skillet, add the olive oil and pounded chicken. Evenly season with 21 Salute, salt, and pepper.
  2. Cook over medium-high heat for 5 minutes without moving the chicken.
  3. After 5 minutes, flip the chicken over – it should have a medium golden color. If using thicker chicken breasts, sear for an additional 6-7 minutes.
  4. Let it cook on the second side for about 5 minutes until fully cooked. Then, remove the chicken with a slotted spatula and place it on a plate to rest.
  5. Using caution, deglaze your skillet by adding wine or broth, letting it bubble up and steam for a few seconds.
  6. Add butter and let it melt for about 1 minute, stirring continuously.
  7. Next, add the garlic and cook until fragrant, which should take about 1 minute.
  8. Turn off the heat, return the chicken to the skillet, and flip it around in the garlic butter sauce to coat.
  9. Spoon the sauce over the chicken, garnish with parsley if desired, and serve immediately.

Notes

Enhance flavor with a squeeze of fresh lemon juice, and customize with herbs like rosemary or thyme. Serve chicken over rice or pasta to soak up the sauce.
