  • 2 cups caramelized onions Use fresh caramelized onions for the best flavor.
  • 1 cup shredded mozzarella cheese
  • 1 cup breadcrumbs Panko can be used for a lighter crumb.
  • 2 large eggs Bind the ingredients together.
  • 0.25 cup Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste.
  • Fresh herbs (thyme, parsley) For garnish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, caramelized onions, shredded mozzarella cheese, breadcrumbs, eggs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined.
  4. Form the mixture into a loaf shape and place in a baking dish.
Baking
  1. Bake for 1 hour or until the meatloaf is cooked through and the cheese is melted.
  2. Let it rest for a few minutes before slicing.
  3. Garnish with fresh herbs and serve.

Notes

For more onion flavor, mix some extra caramelized onions into the top before baking. Customize with different cheeses or use panko for a lighter crumb. Store leftovers in sandwiches or with a crisp salad for a quick lunch.
