Ingredients
  

  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg large egg
  • 1 tsp vanilla extract
  • 1/2 cup sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and baking powder.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually mix in the dry ingredients until a soft dough forms.
  6. Roll dough into 1-inch balls and roll each in sugar. Place 2 inches apart on prepared baking sheets.
  7. Bake for 8-10 minutes or until edges are lightly golden. Remove from oven and allow to cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, chill the dough for 30 minutes before baking to prevent spreading. You can also roll the dough in colored sugar for a festive touch.
