Ingredients

  • 2 pieces boneless skinless chicken breasts Cut into bite-sized pieces.
Starch
  • 1 cup white rice (uncooked) Rinse under cold water to remove excess starch.
Liquids/Dairy
  • 1 can cream of mushroom soup Provides a creamy base.
  • 1 cup milk Adds moisture.
  • 1 cup water Can substitute with vegetable broth.
Seasoning/Spice Blend
  • 1 packet onion soup mix Adds savory depth.
  • 1 tsp paprika Gives a subtle warmth.
  • 1/2 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Adjust to taste.
Optional Finishing Ingredients
  • 1 cup shredded cheddar cheese Add during the last few minutes of cooking.
Garnish
  • 1 tbsp parsley Chopped, for garnish.

Preparation
  1. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and paprika.
Cooking
  1. In a large pan over medium heat, add a little oil and sauté the chicken pieces until golden brown, about 5-7 minutes.
  2. Stir in the uncooked rice, onion soup mix, cream of mushroom soup, milk, and water. Mix until well combined.
  3. Bring the mixture to a gentle simmer, cover the pan, and let it cook for about 25 minutes until the rice is tender.
  4. In the last few minutes of cooking, sprinkle the shredded cheddar cheese on top and cover to allow it to melt.
  5. Remove from heat and let it sit for a few minutes before serving. Garnish with fresh parsley.

Notes

For extra flavor, sear the chicken until golden before adding the other ingredients. Customize by adding veggies like peas or bell peppers.
