- Turn your Instant Pot to the sauté mode. Add 1 tablespoon of olive oil and wait until it shimmers.
- Add the ground beef and break it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
- Stir in the chopped onion, minced garlic, and diced bell pepper. Cook for about 3-4 minutes until the veggies soften.
- Add the can of diced tomatoes, beef broth, and tomato paste into the pot. Stir well to combine.
- Sprinkle in the chili powder, cumin, paprika, oregano, and salt. Stir thoroughly to mix the spices throughout.
- Gently fold in the kidney beans and ensure everything is mixed. Secure the lid on your Instant Pot and set to high pressure for 10 minutes.
- Once cooking time is up, perform a quick release to let the steam escape. Carefully remove the lid and give your chili a good stir. Taste and adjust seasoning if necessary.
- Ladle the chili into bowls and top with your favorite ingredients, like shredded cheese and sour cream.
Notes
Consider adding a splash of lime juice before serving for brightness. Adjust the spiciness by adding diced jalapeños or chipotle peppers. Serve with a side salad for freshness.
