  • 1 pound ground beef (80/20) Use for optimal flavor; can substitute with ground turkey or chicken.
  • 1 medium onion, finely chopped Adds sweetness.
  • 3 cloves garlic, minced Enhances depth of flavor.
  • 1 medium bell pepper, diced (red or green) Adds crunch.
  • 1 14.5 oz can diced tomatoes with juices Fire-roasted preferred for a smoky flavor.
  • 2 tablespoons tomato paste
  • 1 cup beef broth Homemade or low sodium.
  • 1 15 oz can kidney beans, drained and rinsed
Spices
  • 2 tablespoons chili powder Key to flavor.
  • 1 teaspoon cumin
  • 1 teaspoon paprika Smoked if available.
  • 1 teaspoon dried oregano
  • 1 teaspoon salt Start with this; adjust to taste.
  • 1 teaspoon pepper Adjust to taste.
Finishing Ingredients
  • 1 tablespoon olive oil For sautéing.

Cooking Steps
  1. Turn your Instant Pot to the sauté mode. Add 1 tablespoon of olive oil and wait until it shimmers.
  2. Add the ground beef and break it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the chopped onion, minced garlic, and diced bell pepper. Cook for about 3-4 minutes until the veggies soften.
  4. Add the can of diced tomatoes, beef broth, and tomato paste into the pot. Stir well to combine.
  5. Sprinkle in the chili powder, cumin, paprika, oregano, and salt. Stir thoroughly to mix the spices throughout.
  6. Gently fold in the kidney beans and ensure everything is mixed. Secure the lid on your Instant Pot and set to high pressure for 10 minutes.
  7. Once cooking time is up, perform a quick release to let the steam escape. Carefully remove the lid and give your chili a good stir. Taste and adjust seasoning if necessary.
  8. Ladle the chili into bowls and top with your favorite ingredients, like shredded cheese and sour cream.

Notes

Consider adding a splash of lime juice before serving for brightness. Adjust the spiciness by adding diced jalapeños or chipotle peppers. Serve with a side salad for freshness.
